Strawberry Mint Champagne Punch

Strawberry Mint Champagne Punch

1 lb fresh Strawberries
6-8 sprigs of Mint
1 bottle Champagne or sparkling white Wine

Puree the Strawberries and Mint in a food processor. Strain out the seeds through a fine sieve into a small punch bowl. To serve, first spoon this mix into a champagne glass and then top off each one with Champagne. Decorate each glass with a sprig of Mint.

You can make this several ways. You can make it up this way, multiplying the mix by the number of people you expect and serve it up one glass at a time this way. Or you can make it up together in advance, like a punch, in a bowl by mixing the fruit mixture together with bottles of champagne, using one full bottle for every 1 lb of Strawberries you use. Either way it's good.
