Melon, Ginger and Borage Cup

Melon, Ginger and Borage Cup


1/2 large Honeydew Melon
1 quart Ginger Beer
1 tsp powdered Ginger
Borage sprigs with flowers
--serves 8--

Discard the seeds from the melon and then xcoop the flesh into a blender or food processor. Blend to a thin puree. Pour the puree into a large jug and top with Ginger Beer. Add powdered Ginger to taste. Pour into highball glasses and decorate with Borage sprigs and flowers.
